What is Tea?

What is tea, silly question right? After all, tea is the second most common drink consumed in the world just behind water. However, for the longest time I will be the first to admit I did not know what it was. Sure I had tried it before. First, some nondescript leaves in an opaque bag. Then later I could distinguish green tea, black tea, and finally white tea. Even then, I thought each different tea came from a different plant.

It was not until much later that I realized tea comes from camellia sinensis an ever green shrub originating in China. Each type of tea: green, black, white, oolong, pu-erh…etc vary by how the same plant (camellia sinensis) has been harvested. Herbal teas such as peppermint, rooibos, and chamomile are not actually tea, but infusions.
